Sicilian Winter Salad

Fennel is a winter vegetable and oranges were traditionally only found in winter. In Sicily, Italy, they prepare a beautifully refreshing salad with just these two ingredients. My Sicilian friends, John and Tina, introduced me to it in Sydney and I often prepare it for my friends. You can serve it at the beginning of a meal, between dishes to clean the palate or at the end of the meal, like a sort of pre-dessert. It's always a hit and it's so easy to make!
Ingredients
2 fennels (the bulb, no stem or leaves)
3 oranges (blood oranges are very good for this recipe, see picture below left)
salt
chili flakes
olive oil
Preparation - Clean fennels by discarding outer layer, top and bottom
- Chop fennels into quarters
- Slice fennels thinly
- Peel oranges
- Cut oranges into small pieces
- Get rid of orange pips
- Dress with salt, chili flakes (optional) and olive oil
